Ok, so this is obviously not a Vietnamese dish and my mum did not make it, I made it myself but with the sisters away and no bags to sew I have been a little bit on the bored side...so I whipped up this upside down cake from leftover apples! I did share it though, I let Sarah Rich have ONE slice.
Bún Riêu is a delicious tomato tamarind vermicelli noodle soup. It has curdled egg throughout the soup, and for last Sunday our mum made it with fried tofu, sliced pork and prawns. It's topped with fresh bean sprouts, mint, shredded curly celery, spring onion, lettuce, shrimp paste and a squeeze of lemon. Too good. Unfortunately, although Greg had put in a special request for this dish he couldn't make it for dinner as he'd given himself food poisoning the day before! Uh oh, and Nhi was in London and Phuong and Jeremy were in Vietnam so I had to eat it all myself!
Rice noodles, piled with grilled pork, spring rolls, pickled carrot and radish, mint, cucumber and doused in spring onion, olive oil, crushed peanuts and chilli garlic sauce.
Assembling the perfect rice paper roll...cucumber, star fruit, prawns, squid, beef & carrot, crushed peanuts, lettuce, coriander, mint, sticky chive noodles in olive oil, did I forget anything? Rolled and dipped in Hoisin peanut sauce and spicy tofu sauce.
